I woke up this morning wanting to make cinnamon rolls from scratch for my kids. There’s too much snow out and the roads are so messy that we decided not to open the shop today. However, I didn’t have the time, ingredients, or patience to make cinnamon rolls properly, and so I found a recipe, tweaked it until I liked it, and here is the result: Cinnamon rolls, no yeast, no rising, no cream cheese, and ready in 45 minutes. Quick Cinnamon Rolls

Cinnamon rolls using every day ingredients, ready to eat in 45 minutes!

  • Standing mixer
  • Measuring cups
  • 2 Muffin pans


For the rolls

  • 3 cups all-purpose flour
  • 16 tablespoons granulated sugar (divided use)
  • 2 teaspoons baking powder
  • 1 teaspoons baking soda
  • 1/3 cup whole milk
  • 4 teaspoons apple cider vinegar
  • 16 tablespoons butter, melted (divided use)
  • 9 tablespoons light brown sugar (divided use)
  • 3 teaspoons cinnamon (divided use)

For the frosting

  • 3 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 3 tablespoons whole milk


Cinnamon Rolls Instructions

  • Preheat the oven to 375 degrees.
  • Add the flour, 3 tablespoons of the granulated sugar, baking powder, baking soda, and salt to a mixing bowl. Mix on low until all ingredients are combined.
  • In a measuring cup, melt 8 tablespoons of butter (one stick), in the microwave. Should take 30-45 seconds.
  • Add the wet ingredients into the mixer, and continue to mix until a soft dough forms.
  • Flour a workspace, divide your dough into four sections, and work with one section at a time.
  • Roll your dough out into a rectangle shape, about 1/4 inch thick.
  • Melt 2 tablespoons of butter and brush over the top of your dough.
  • Mix 3 tablespoons of brown sugar, 1 teaspoon cinnamon, and 1 tablespoon granulated sugar in a small bowl and cover the dough with it.
  • Carefully roll the dough up, starting with the long side. When you get to the end, pinch the seam shut.
  • Use the remaining melted butter in your measuring cup to coat the inside four spaces in a muffin pan.
  • Cut the cinnamon roll into four equal pieces and put them into the muffin pan.
  • Repeat steps 5-11 with the rest of your dough.
  • Bake for 15 minutes.
  • Frost the cinnamon rolls when they come out of the oven and serve immediately.

Instructions for the frosting

  • Add all ingredients in a mixing bowl and mix until smooth and creamy.
